As of now, there is no setting by default to toggle crossplay in Genshin Impact. The game supports crossplay by default, as you can play the game with your friends in Multiplayer mode.

All you need to do is add one another using your UID which can be found at the bottom-right corner of your screen. However, both of you need to be at Adventure Rank 16 to unlock the game’s multiplayer co-op feature.
